Healthy Cake for Kids Birthday Party

My little son had his birthday and we had a party for him at home. I decided that having a healthy cake option would be better for them and also save us from sugar-rush craze after the cake. So I decided to use my son's favorite carrot cake as the cake topped by vanilla pudding. 

Here's the recipe I used mixing everything with a mixer:
  1. Mix 5 eggs with 1.5 cups of brown sugar until the sugar melts.
  2. Add 1 cup of shredded raw carrots and 1 cup of chopped walnuts. (Use food processor for easy shredding and chopping)
  3. Add 2 cups of flour and a tablespoon of ground cinnamon.
  4. Add a small spoon of baking soda.
  5. Heat the oven to 350F and bake in the middle shelf of the oven in a cake pan.
  6. Use a knife to test for the consistency to see if it is done. If the dough sticks to the knife when you pull it back, it is now done.
I used vanilla pudding as a filling and topping.

After it cooled down, I sprinkled some cinnamon and added Elmo accessories. I found some crayon-shaped candles at the drugstore that looked exactly like Elmo's. Although the cake didn't look professionally made, I still can declare it a success as it tasted delicious.

My Style: Thanksgiving

I used a bordeaux tablecloth with red and bordeaux candles on a mirror. We had eight guests so I used four small pumpkins and inserted dark roses between every two plate to form a long central line on the table. The napkins are my Grandmother's hand work that I inherited from my late Mother.
Thanksgiving is one of our favorite holidays and we host dinner every year. This year was no exception. I don't get to wear skirts much in my professional life so I choose dresses or skirts over pants all dress up occasions. This year, I wore a simple black dress from Ann Taylor and accessorized with a green leather OBI belt, green suede pumps from Zara and a heart shaped string of pearls. I wore a black cardigan for extra layering and warmth, but made sure nothing gets in the way when I serve food.

Thanksgiving Outfit for the Entertainer and the Guest -- Food for Thought

If you are the Guest:
  • Plan your attire according to the dressiness level of the dinner party. A little overdressed is better than under-dressed on such days.
  • A sheat dress is a good option for many reasons. You can dress it up and down. This is an eating day so the dress will give you enough room around the waist unlike jeans and pants.
  • Accesorize is you don't have a festive dress. A little sparkly pin can turn a simple dress or jacket into an evening wear.
If you are the Hostess:
  • Make sure your clothes are comfortable to move, especially not restrictive around the arms and sleeves when you serve. A festive knit top with 2/3 sleeves is generally a great option.
  • Flat shoes with sequins are a great dress up option when you have to stand a lot.
  • Plan to get done with dinner preparations at least half an hour before guests arrive so that you could change and apply your make up.
  • Opt for statement earrings and chokers as long necklaces and bracelets can get in the way around the kitchen.

Book Club: Micheal Pollan -- A Naive Omnivore's Food and Botany Guru

We are what we eat and even though we're designed to digest a bunch of junk, the effects of them on our body is irreversable.

I have been a great fan of Michael Pollan's books since the day I heard about The Omnivore's Dilemma. Over the years, I really enjoyed reading all his books and educating myself further on this subject.

If you find yourself interested in botany and mainly food, below is my prioritized reviews on all of Pollan's books on food and botany.
Hope you enjoy reading some of them as much as I did.

  • The Omnivore's Dilemma: A Natural History of Four Meals: If you're ready to start reading about the food industry and how the modern age food chain works, this is a perfect first book. It definitely made me think about where my food comes from and how I can help with my own actions to encourgae family and friends to adopt better practices when it comes to what they eat. A brutally honest and awakening book.
  • In Defense of Food: An Eater's Manifesto: "Eat food!" was the message from the beginning. It is a wonderfully written critisism if our nutrient-oriented point of view on food. The best lines in the book for me was when he claims that one doesn't have to know about licopen to understand tomatoes cooked in olive oil is really good. What a great thing to say!
  • The Botany of Desire: A Plant's-Eye View of the World: This is a fascinating tale of how plants and people help each other evolve based on four common desires: sugar, beauty, intoxication and power. There are some beautiful historical stories and facts in there. Very impressive research and journalism.
  • Second Nature: A Gardener's Education: My least favorite of the four books I read. Most probably because of having non a big interest on gardening.
  • The Omnivore's Dilemma for Kids: The Secrets Behind What You Eat: Just ordered this and looking forward to reading it with my son.
  • Food Rules: An Eater's Manual:This title is on pre-order at Amazon.com (see below) and will be released on December 29th. I can't wait to get a copy of it.
